Keto Chocolate Cake Recipe

Ingredients:

  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sweetener of your choice (such as erythritol or stevia)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk (or your choice of non-dairy milk)

Topping (optional):

  • 1/4 cup dark chocolate (>85% cocoa)
  • 2 tablespoons coconut cream

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a small cake pan with coconut oil or line it with parchment paper.
  2. In a bowl, mix the almond flour, cocoa powder, sweetener, baking powder, and salt.
  3. In another bowl, whisk the eggs, melted coconut oil, vanilla extract, and almond milk until well combined.
  4. Add the liquid mixture to the dry ingredients and mix until you have a smooth batter.
  5. Pour the batter into the prepared pan and bake for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the topping (if desired). Melt the dark chocolate and mix it with the coconut cream until you have a smooth consistency.
  7. Once the cake is done, remove it from the oven and allow it to cool for a few minutes.
  8. Pour the chocolate topping over the cake and spread it evenly.
  9. Let the cake cool completely before cutting it into individual servings.
