Ingredients
1 cup almond flour
1/4 cup unsweetened cocoa powder
1/4 cup erythritol (or another keto-friendly sweetener of your choice)
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup melted coconut oil
1 egg
1/2 teaspoon vanilla extract
1/4 cup dark chocolate chunks (make sure they are low in sugar and carbs)
Instructions:
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, mix almond flour, cocoa powder, erythritol, baking soda, and salt.
- In another bowl, combine melted coconut oil, egg, and vanilla extract.
- Blend the wet ingredients into the dry ingredients and stir until you have a consistent dough.
- Fold in the chocolate chunks.
- With moist hands, form small balls of dough and flatten them on the prepared baking sheet.
- Bake in the preheated oven for approximately 12-15 minutes, or until the cookies are firm to the touch.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack. They will firm up further as they cool.

2. Ketogenic Vanilla COOKIE With Chocolate Chips

Ingredients
1 cup almond flour 1/4 cup erythritol (or another keto-friendly sweetener of your choice)
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup melted coconut oil
1 egg
1 teaspoon vanilla extract
1/4 cup dark chocolate chips (make sure they are suitable for a ketogenic diet)
Instructions:
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, erythritol, baking soda, and salt.
- In another bowl, mix melted coconut oil, egg, and vanilla extract.
- Blend the wet ingredients with the dry ingredients and stir until the dough is well mixed.
- Fold in the chocolate chips.
- With damp hands, form small dough balls and flatten them on the prepared baking sheet.
- Bake in the preheated oven for about 10-12 minutes or until the cookies are firm to the touch.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack. They will firm up a bit more as they cool.
